Brewing Tips

Gongfu Cha (Traditional Chinese Method)

Teaware: Gaiwan or Yixing clay teapot

Tea-to-water ratio: 5–7g per 100ml

Water temperature: 95–100°C (203–212°F)

Steeping time:

  • Rinse once briefly
  • 1st infusion: 10-15 sec
  • Increase each infusion by 5–10 seconds
  • Infusions: Up to 8–10 times — flavour deepens beautifully over time

 

Western Brewing

Amount: 2g per 250ml

Water temperature: 95°C (203°F)

Steep time: 2–3 minutes for first brew; second steep 3–4 minutes

Re-steep: 2–3 times
